1. Neelam samba Pori Dosai
Ingredients
- Neelam samba -1cup (200g)
- Black lentils-1/4cup (50g)
- Puffed rice -3cups (600g)
- Fenugreek-1/2tsp
Method
- Soak the rice in water overnight.
- Soak the lentils and fenugreek.
- Soak the puffed rice in water for 5min.
- Grind all the ingredients nicely.
- Allow it to ferment for 8hrs.
- Now you can make a crispy dosa.
- It goes well with mutton gravy or chilli chutney. Try it and enjoy.

2.Neelam Samba Kara Kali
Ingredients
- Neelan samba rice-1 cup (200g)
- Green gram dhal-1/2 cup (100g)
- Pepper-1 tsp
- Onion-2 nos
- Green chilli-4 nos
- Mustard seeds-1 tsp
- Urad dal-1 tsp
- Curry leaves- a bunch
- Hing-1 pinch
Method
- Wash and soak the rice for 3hours.
- Wash and fry the green gram dhal.
- Grind both the ingredients coarsely.
- Grind pepper with it.
- Heat the oil in kadai.
- Add mustard seeds, urad dal and green chillies.
- Add curry leaves and onion.
- Add the powdered rice.
- 1 cup powder with 2 cups of water.
- Keep 3 whistle after 10minutes open the lid.
- Just mix it and serve it with brinjal chutney.
This recipe is a slight version of rice upma for rice upma. Have it with brinjal chutney, try it and enjoy.

3.Nutritious Neelam samba kanji powder
Ingredients
- Neelam samba rice – 2 cups (400g)
- Roasted Bengal gram – 1 cup (200g)
- Wheat flour – ½ cup (100g)
- Ragi – ½ cup (100g)
- Thinai maavu – ½ cup (100g) (available as flour in store or can roast thinai and grind it to make a flour)
- Green gram (pacha payir) – ½ cup (100g)
- Sesame seeds – ½ tsp
Preparation
- All the above mentioned ingredients should be roasted individually until you get good smell.
- Allow it to cool
- Grind it to a fine powder
- With this powder, you can add sugar/ jaggery and milk/ buttermilk and salt / cardamom powder to consume on regular basis.

4.Neelam samba sathu maavu laddoos
Ingredients
- Neelam samba saththu maavu – ½ cup (100g)
- Powdered jaggery or powdered sugar – ½ cup (100g)
- Melted ghee – 2 tsp
- Honey – ½ tsp
- Cardamom powder – a pinch
- Roasted cashewnuts (optional)
Preparation
- Mix all the ingredients and add honey, ghee and cardamom powder to it. Shape it into balls.
