Recipes using Kaatuyanam Rice

1. Kaatuyanam ghee roast


  • Kaatuyanam – 250 grams
  • White lentils – 100 grams
  • Split green lentils – 1 tbsp (15 gms)
  • Fenugreek- ½ tsp
  • Salt- ½ tsp


  1. Rinse and soak the rice and split gram overnight
  2. Add the lentils and fenugreek with the rice.
  3. After one hour, grind the rice and lentils.
  4. Allow it to ferment for 8 hours.
  5. Now you can make ghee roast or Kal dosa
  6. Serve it with coconut chutney and gun powder.

2.Kaatuyanam athirasam


  • Kaatuyanam rice-  1/2 kg (500g)
  • Jaggery – 350 gms
  • Cardamom powder – 1/4 tsp
  • Banana leaf – 1 no
  • Gingely oil / Coconut Oil / Ghee – 1/4 Kg (250ml)


Soak the rice for 4 hours. Then filter out the water and dry it completely. Then grind it in a mixer very finely. Soak jaggery in water and boil it until it thickens. Mix cardamom powder. Turn off the stove and add flour and keep it in a pan for 2 hours. After 2 hours pat them on banana leaves and fry in medium hot oil or ghee.
