Recipe using Bajri Jhuli Rice

Bajri Jhuli Curd Rice


•    Red rice- 1 cup

•    Milk -2 to 4 tablespoon

•    Fresh curd- 2 cup

•    Salt- ½ tsp

•    Green chillies- 1 cut into small pieces

•    Curry leaves- one twig finelly chopped

•    Hing-a pinch

•    Pomegranate-a handful

•    Cashews- 4 cut into pieces

•    Ghee- 1 tablespoon

•    Mustard- 1/2 teaspoon

•    Urad dal 1 tablespoon


Wash the rice, soak for at least 5 hours and cook in a pressure cooker with 2 and a half cup water. Transfer the rice to a deep container and mash a little by adding milk, when it is cool, add curd, salt and mix well. For seasoning, heat ghee, splutter mustard, add urad dal, hing, curry leaves, green chillies and cashew bits. Mix everything, garnish with pomegranate.
